DAY ONE - CONT'D
Juicing on Day One was a lot of work, but for the most part I wasn't that hungry. I had a lot of wheatgrass that needed to be juiced before it went bad, so I did that and frozen them in a cupcake pan that I lined with cellophane. Luckily I had two cupcake pans so I could use one to press the cellophane into the other. I ended up with eight very generous double shots which will thaw in a couple of minutes at room temperature. Sweet!
I then juiced beets, carrots, cucumber, kale, tomato, broccoli, and apple and drank one and froze the rest. I will have the last of that after yoga in the morning. I also made soup, which will be my one cooked meal of the day. I took the pulp from my juice (before I juiced the apple) and added more broccoli, greens, parsley, carrots, onion, cilantro, and peppers, including a jalapeno and cooked it down with a bottle of V-8. After it was cooked, I pureed it in the blender and sealed it in jars. I will have one of those a day until I am sick of it and then I'll cook another, greener batch. My friend, Kim, is the one that told me that the Martha's Vineyard juice diet allows one cooked vegetable soup a day. Good thing, because it holds off starvation pretty well.
So as good as the juicing went, the meditation did not go so well. During morning meditation, my husband called and I took the call rather than ignore it. (My bad!) And I waited until I went to bed to do the other half hour, which ended in sleep long before the 1/2 hour was through. Okay, so I resolve to do better on Day Two.
I am actually writing this at the beginning of Day Two before my meditation. I have lost one pound and I feel pretty good. Off to meditate and then yoga. See ya'll!
